Sweet Chattipathiri

SWEET CHATTIPATHIRI


Ingredients


For Pathiri:

AllPurposeflour (Maida) - 100 gm
(for making 6 layers)
Oil - 1 tbsp
Water - As reqd
Salt - As reqd

For Filling:

Eggs - 3 nos
Sugar - 5 tbsp
(Can adjust according to your preferences)
Ghee - 1 tbsp
Raisins- 25 gm
Cashewnuts (broken) - 25 gm
Cuscus-25 gm(optional)you can use roasted rava.
Cardamom powder - 1 tsp

For coating:

Eggs - 3 nos
Sugar - 4 tbsp
Cardamom- A pinch
Milk-1cup


Preparation method


Mix the flour with water, oil and salt and knead into a dough like that of chappathi (medium thick).
based on the size of ur cooking pan,using a roller pin, roll it out into paper-thin chapathies of uniform size.
Cook the chappathis lightly on a tawa.
Beat 3 eggs with sugar,1 tbsp ghee and cardam.
Heat a pan.roast cuscus.
Another hot pan add ghee and saute raisins, cashewnuts until they change the colour slightly.Add the beaten egg and scramble the whole mixture. Keep it aside.
Beat the remaining eggs,milk,sugar, cardamom and keep aside.
Take a non-stick baking tray, spread 1 tsp oil or ghee all around.Dip the chappathi in the egg mixture, coat well and place it as first layer.Arrange the scrambled egg mixture.and cuscus.Keep another chappathi on top.Make a new layer. Keep adding the egg-coating at each step and finally pour the remaining egg mixture over the sides and on the top.Garnish with cashew nuts,raisins and cuscus.cook in a non stick pan in low flame for nearly 15 minutes or till the whole pathiri turns golden.
Sweet chattipathiri is ready..enjoy..
